Cowboy Caviar

There aren’t many healthy dips in my repertoire, but I’m happy to report this one is a favorite of many. So, at least I have one healthy dip recipe that is a solid winner. When I make it, I don’t want to share it with anyone because it’s so good! I’ll often eat it as a meal, because why not? I’m pretty sure tortilla chips are considered an essential food group (Don’t ask my dietician mother, she probably won’t agree).

The best part about this recipe is that it is so simple to whip together. You’ll need to prep a few veggies, but once the cutting is done, two stirs of the bowl and you’re ready to dip your chips!

What you’ll need

  • Corn
  • Black Beans
  • Avocados
  • Tomatoes
  • Green Onions
  • Italian Dressing
  • Garlic Powder
  • Splash of lime juice on the avocado, to keep it from turning brown

You can also add extra veggies as you see fit. I like to add a red, yellow or orange sweet bell pepper-or 1 of each to make a larger batch. Feeling spicy? Add a jalapeƱo. Really, go ahead and deviate from the recipe; experiment, find new paths, explore the unknown. Ok, maybe I’ve gone too far with that. Moral of the story; make it whatever you want it to be.

Ingredients
  

  • 10 oz Frozen Corn
  • 1 15 oz can Black Beans Rinsed
  • 2 Avocados Chopped
  • 1 Large Tomato (or several small) Chopped
  • 1 bunch Green Onions Chopped
  • 1/4 cup Italian Dressing
  • 1/4 tsp Granulated Garlic
  • 1 tbsp Lime Juice

Instructions
 

  • In a large bowl, add corn, beans, tomatoes, green onions and stir to combine.
  • Chop avocados and sprinkle with lime juice to prevent browning
  • Add avocados, Italian Dressing and granulated garlic to the corn & bean mixture and gently toss to fully combine
  • Serve with tortilla chips or refrigerate until ready to serve
