When you’re in a bind for breakfast and you want something that’s quick and can feed a crowd, egg bakes are the way to go. The best thing about an egg bake, is that you can whip it up quickly in the morning or make it the night before and store it in the fridge. This recipe bakes up quickly in about 30 minutes and we’re calling this the “Anything & Everything Egg Bake,” because you can customize it to your own liking or the liking of your guests.
Ingredients
When making this recipe, the only requirements are eggs and milk. The rest of the add-ins are up to your own discretion. Here’s what I used this time around.
- Eggs
- Half & Half
- Hashbrowns
- Cheddar and Colby Jack Cheese
- Diced Ham
- Red Pepper
- Yellow Pepper
- Roasted Poblano Pepper
- Yellow Onion
- Seasonings
- Season Salt
- Pepper
- Garlic Powder
- Trader Joe’s Mushroom & Company Multipurpose Umami Seasoning Blend
I’ve been on a roasted poblano kick lately. I can’t get enough of that slightly spicy, Tex-Mex, roast-y flavor. (See my How-To for roasting poblano peppers below). Add poblanos to sautéed onions and bell peppers and you’ve got an over-the-top egg bake!
Now remember, you can make this egg dish any ol’ way you want to. Here are some suggestions:
- Don’t like veggies? Leave em’ out!
- All meat: Ham, Bacon, Sausage
- Veggie Lovers-Peppers, Onions, Asparagus, Spinach, Tomatoes, Mushrooms etc.
- Ham & Cheese
- Tex-Mex: Chorizo, Peppers, Cheese, Chili powder
- Italian: Italian Sausage, Spinach, Ricotta Cheese, Tomatoes, Parmesan Cheese & Italian Seasoning
- Feeling Greek? Add some Feta Cheese
See how versatile this dish can be? Not only versatile, but it goes together in a snap! Prepping the veggies and meat choices are the hardest part. Once you have all that ready to go, just beat your eggs and milk and assemble.
Some Assembly Required
Start with the hash browns on the bottom, followed by your choices of add-ins (be sure to save a little cheese for the top). Pour the egg mixture over everything and sprinkle on a little extra cheese. Throw that baking dish in the oven and let it bubble away for 30 minutes. While it bakes, fix yourself a coffee, orange juice or mimosa and put your feet up.

Everything Egg Bake
Equipment
- 9"X9" Glass Baking Dish
Ingredients
- 8 Eggs
- 1/2 cup Half & Half Or Milk
- 1 tbsp Olive Oil
- 1/2 Red Bell Pepper, Diced
- 1/2 Yellow Bell Pepper; Diced
- 1/2 Roasted Poblano Pepper; Diced
- 1/3 cup Diced Yellow Onion
- 1/2 cup Diced Ham
- 2 cups Hashbrowns
- 1 cup Grated Cheese Cheddar, Colby Jack, Pepper Jack, Swiss etc.
- 1/2 tsp Season Salt
- 1/2 tsp Ground Black Pepper
- 1/2 tsp Trader Joe's Mushroom & Company Multipurpose Umami Seasoning Blend
- 1/4 tsp Garlic Powder
Instructions
- Preheat oven to 400°F and spray 9"x9" baking dish with non-stick cooking spray.
- Heat skillet and add in 1 tbsp olive oil. Add peppers and onion to skillet and saute until tender. Remove from heat.
- Beat eggs and half & half. Season egg mixture with season salt, pepper, garlic and umami seasoning blend.
- Place hasbrowns in the bottom of prepared baking dish. Then add peppers, onion, ham and 3/4 cup of cheese. Reserve remaining cheese for the top of the egg bake.
- Pour egg mixture over the hasbrowns and add-ins. Top egg mixture with reserved 1/4 cup of cheese.
- Bake egg dish for 30-35 minutes or until top is browned and eggs are set.
Roasted Poblano Peppers
- Roast poblano peppers over flame or broil in the oven until skin is blistered and blackened.
- Place peppers in sealed container or storage bag and let sweat for 5-10 minutes.
- Remove peppers from container and scrape off the blackened skin either with a knife or using a paper towel. Slice the pepper open and remove seeds and membranes.
