Jalapeno Popper Dip

Jalapeno Popper Dip

When you think of the epitome of appetizers, what comes to mind? I seem to reach for something creamy and spicy, wanting something to bring the heat but also cool the burn. Jalapeño poppers are a tried and true appetizer favorite, but take so much effort to make; having to clean the jalapeños, fill them with the cream cheese mixture and then bake ’em up. Who has time for that??

This dip brings all the deliciousness of jalapeño poppers minus all of the work. It is a favorite of the work pot-luck and party circuits. Also, it is delicious served hot or cold and pairs well with all sorts of dippers.

First, combine softened cream cheese with mayonnaise. Don’t even think about using Miracle Whip. This is neither the time nor the place to discuss the mayo vs. Miracle Whip debate. If you use Miracle Whip, you will be sorely disappointed. This coming from someone who tried it in a pinch and the whole batch went in the garbage after one disgusting bite. So, learn from my mistakes-ONLY USE MAYO!

Now the hard part is over. Really, combining the cream cheese and mayo is seriously the hardest part. Next, add in the diced jalapeños and green chiles and the parmesan cheese. I like to also add in a couple shakes of garlic powder for a little depth of flavor. Stir to combine and spread into a baking dish or if you’re in a real hurry, you can nuke it in the microwave.

I like to add my own flair to any recipe I make, so this recipe is no exception. If I’m not making this for my celiac friends, I add some crushed Texas toast croutons & a handful of leftover parmesan cheese to create a crunchy topping. Now you can throw it in the oven for 30 minutes or until it is golden brown on the top and is bubbling.

Since your mouth has been watering for a while, we can finally dig in! Here’s where you can get rather creative and choose to be healthy or go straight for the guilty pleasures. I enjoy creating a dippers platter of bread cubes, tortilla chips or pita chips, and a variety of veggies.

So, next time you’re on the line for a delectable dip for a pot-luck or party add this to your repertoire. But, be prepared for all the requests you’ll get for the recipe!
